Salad from a shelf-patch: How fresh can restaurant’s food be?

Galileo reporter Martin Dunkelmann barely belives his eyes: lab-athmosphere in the restauratn, magenta light, plants on floors. On the other side: a counter.

In these farms is growing the base of the dishes. Salanova Oak, Salanova Butter and baby kale are the names of these exotics which are growing directly in front of your eyes

Of course Martin tastes one of our bowls and his conclusion is: “My salad tastes super fresh and intense.”
